The New American Diet . . .
The one without bug poisons and weed poisons and meat poisons.
We already grow enough food to nourish the nine billion people estimated to be here in a few years, for we eat only about one third of those crops. The rest goes to feeding animals for food, most of that to beef. Monsanto’s lie about not being able to produce enough food to feed the world without biotech is one of the flimsiest of all lies yet that lie is being received as the truth by a gullible press, politicians and populace alike.
Please stop eating Grain-Fed Beef – that will hit the subsidized corn producers where it hurts, and at the same time take away revenue from Monsanto. Genetically Modified Grain-fed beef is produced in Confined Animal Feeding Operations (CAFO’s) and is laden with Antibiotics and Hormones the source of many illnesses that our children and their parents are suffering from today.
Figure this one out: We are the FATTEST nation on earth. Type 2 Diabetes is an epidemic, and yet your congress is awarding $3Billion of your tax dollars to corn production! Look at the labels on your grocery shelf: High Fructose Corn Syrup – Soy Protein Isolates. The corn and the soy grown by being drenched with glyphosates and other eco-poisons. You are a Frog in the slowly heating water and your health is in serious decline if you are eating Genetically Modified ingredients in your foods.
Don’t you really think that someone as proud of their achievements as the BioTech biggies would be happy to put their label on their product? Wonder why they don’t do that? Seems fair to me, how about you?

Yours, and my tax dollars are being passed along gratuitously to Corn and Soybean farmers and thus to Monsanto by the billions of dollars each year. Monsanto cycles a large part of that money back to politicians who serve as their marketing arm here and abroad. Demand a stop to this senseless subsidy of crops that we have too much of already, that has led to rampant corruption of our government and lack of choice for Americans at the grocery stores.
And, demand a stop to placing Monsanto’s and other Corporation’s executives in government positions of making rules and regulations that benefit their corporate masters. This is a BIG one. From the Supreme Court, to Congress to 1600 Pennsylvania Avenue, to U.S. Department of State, to the USDA, to the FDA.
Too much power in too few hands, all of which are palms up, waiting for their share of your loot, your health and your welfare be damned.
How long shall we tolerate these crimes against the American populace? A peaceful revolution is in order. If not now, When?
Revolutions take time to develop, and one day a critical mass is reached with the American people, a flash point happens that awakens us and ignites a fury strong enough to rid ourselves of corporate thuggery. The clock is ticking and the steam is building up! Stay the course and stay engaged.
Authors note: It is rumored that Monsanto has Private Investigators and Enforcers to play some bad things on people who speak out too loudly the truth about their products and their methods. So if something untoward happens to me in the near future – please see if there was criminal intervention by these afore mentioned corporate gangsters and corrupt politicians.
Just one generation back America’s top 1% of earners got 9% of total national income, today they control 23+% - much of that 14% gain going to corrupted politicians, judges and regulators to complete a corporate coup d’état of our nation. That should fire you up!
Take action! Raise some hell, call your President, write to your Senator, email your Congressman, post to your local Newspaper.
Act and React for the right to know what is in your food.
Label GMO’s, that is our right to know and choose and it is now our demand!

Open Letter to America
I am very angry at President Obama and his deputies for bowing down and paying fealty to Monsanto. Please indulge me just a bit and allow me to tell you a little of why I say this.
We do not need genetically modified alfalfa, 93% of it is grown without herbicides anyway, so we really don’t need to buy millions of pounds of glyphosate to spray onto our soils in order to produce GM-alfalfa. Glyphosate kills the micro-biology in the soil. And without living soil we cannot produce living food. This same glyphosate doesn’t kill 100% of the weeds, a few survive, and their seeds select for resistance to or immunity to glyphosate and so we then have what is known as Super-Weeds, which in turn needs a stronger dose of chemicals. Thus the fight is enjoined, and so please remember this truth, “Mother Nature always bats last.”
What you have here is not farm policy, it is money policy. Monsanto has a patent on life itself, something that I find egregiously wrong politically, ethically and morally in itself.
It is now entirely possible that Monsanto could own all of the seeds needed to produce all of the major food crops all over the world in just a generation or two, since we now have an aspiring global economy and a quasi global governance that tries to control global trade. It is also conceivable under the document, long proposed by that International Body, known as Codex Alimentarius, that I as an American citizen-farmer would have to respond to an international body of arbiters over a dispute with my American farm products, completely bypassing my constitutional right to due process. And a common farmer in India or China or Mexico will have to borrow money to pay Monsanto for his seeds, or he or she will die and his family with him or her.
Our very own elected members of the U.S. House of Representatives are “…worried that our products will be rejected by the EU and Asia if we brand them as Genetically Modified.” - paraphrased from numerous public accounts. The name of the game is unfettered greed for both money and power, international.
Now imagine thirty years down the road, all of you who may have drinked of Monsanto’s cool-aid pseudo-science publications which absolutely assure you that if we, all of America, do not buy their Genetically Modified seeds, and then the Chemicals needed to allow them to grow, then we could positively not produce enough food to feed nine or ten billion people. I am surprised that more intelligent people have not questioned that assumption more closely. I am ready to challenge this as propaganda at best and a blatant lie at worst.
Alexis de Touqville deduced that democracy carries the seed of its own destruction. An example of this at work is; Politicians meet the ‘Citizens United’ decision of our tarnished U.S. Supreme Court, won against a very weak foe, in the Federal Election Commission. Thanks to this court decision, Monsanto, who now has first amendment rights as an “individual” of ‘free speech’, and they are doing the speaking with their new Money – which this court has equated with talking or writing in the public square. Instead, Monsanto gives our Senators and Representatives and President and many others the monies that they have taken from you and me, to speak for them. The politicians who are speaking now understand Monsanto’s goals and approve of their practices. Now the “freedom of speech” – written by corporate lobbyists and delivered by your elected official - is in making of laws and rules and regulations that promote Monsanto’s best interests. The rest of the populace has to live with the results – farmers, producers, consumers, all of us – with whatever foods are left, grown in dead soils that are mere placeholders for the chemically grown plants. Our United States government has been corrupted by this blatant in-our-face corporatocracy.
Living soil has an energy that is an integral and essential part of the cycle producing grasses that grow with energy from the Sun and rains. All life is grass. Grass in living soil reaches down deep into the Earth and draws to itself micro-nutrients that we try desperately to mimic with pills and chemicals – can’t be done – Mother Nature is at bat.
Some of the people’s most trusted warriors at the forefront of this battle, Whole Foods Market, Stonyfield Dairies and Organic Valley, fought until they were battered and then with last breath wrested a compromise from the USDA and Secretary Vilsak, to “Co-Exist.” That is to grant Monsanto their right to plant Genetically Modified Alfalfa, but with some restrictions that would allow the rest of us some assurance that we could grow the kind of food crops that didn’t include Monsanto’s seeds or chemicals. Hubris, meet greed; that was not enough for an emboldened Monsanto.
They not only wanted their rights, they demanded and got mine too. I am calling on every man, woman and child in America to rise up and demand a stop to this injustice foisted upon us by an ever increasingly corrupt federal government – tainted beyond democracy by corporatocracy.
My deepest desire is that this letter go ‘viral’ and that it is read by millions of people, who like the brave peoples in other countries who are in revolt against unfair governance, that we too revolt against this Corporate-Political hegemon, and demand, by whatever peaceful means necessary our Constitutional right to grow our own food with our own seeds in healthy soil.
Will Rogers said that, “God must have loved the common man, he made so many of them.”

Open Letter to President Obama - Stop Genetically Modified Alfalfa
I am a small family farmer who wholeheartedly supported your election as my president.
I would like to continue my support, but, I cannot do so in light of your capitulation to Monsanto in allowing Genetically Modified Alfalfa to be grown in America.
First of all this is a totally unnecessary crop, since according to Michael Pollan 93% of all Alfalfa is grown without herbicides anyway, so this only benefits Monsanto while putting at dire risk an entire segment of our national farming and food economy.
By your caving in to Monsanto's demands you are putting at great and unneeded risk the organic dairy business, also the total extinction of Alfalfa other than Monsanto's patented GM-Alfalfa. And who exactly benefits from all of this, sir?
You have appointed far too many Monsanto executives in your administration and they are making rules that affect millions of us who are feeling increasingly distraught, helpless and angry at being controlled by one huge corporation with enough clout to determine the farm and environmental policy of your administration.
Mr. Vilsak, a biotech governor and supporter seemingly tried to meet all of us small farmers half way in placing planting restrictions of Monsanto's GE-Alfalfa, but your administration embarrassed him and make him back down from his earlier decision - that sir, is totally unacceptable to millions of us - not just GMO opponents, but any sensible, freedom loving middle class American who detests being unfairly controlled by those with the levers of power at the federal level.
I am personally calling on you to show us your mettle and your common sense to help the common men and women who elected you as our president and stop the USDA approval of Monsanto's Genetically Modified Alfalfa at once!
By doing this you not only restore the loyalty of millions of us to your ideals, hopes and dreams – you also assure the success of Michelle’s garden in your backyard, and you assure your children’s right to choose the kind of food they choose to eat for generations to come.
This is an historical decision Mr. President, please do the right thing – Stop Genetically Modified Alfalfa.

Monsanto's GMO Corn Linked To Organ Failure, Study Reveals

In a study released by the International Journal of Biological Sciences, analyzing the effects of genetically modified foods on mammalian health, researchers found that agricultural giant Monsanto's GM corn is linked to organ damage in rats.
According to the study, which was summarized by Adam Shake at Twilight Earth, "Three varieties of Monsanto's GM corn - Mon 863, insecticide-producing Mon 810, and Roundup® herbicide-absorbing NK 603 - were approved for consumption by US, European and several other national food safety authorities."
Monsanto gathered its own crude statistical data after conducting a 90-day study, even though chronic problems can rarely be found after 90 days, and concluded that the corn was safe for consumption. The stamp of approval may have been premature, however.
In the conclusion of the IJBS study, researchers wrote:
"Effects were mostly concentrated in kidney and liver function, the two major diet detoxification organs, but in detail differed with each GM type. In addition, some effects on heart, adrenal, spleen and blood cells were also frequently noted. As there normally exists sex differences in liver and kidney metabolism, the highly statistically significant disturbances in the function of these organs, seen between male and female rats, cannot be dismissed as biologically insignificant as has been proposed by others. We therefore conclude that our data strongly suggests that these GM maize varieties induce a state of hepatorenal toxicity....These substances have never before been an integral part of the human or animal diet and therefore their health consequences for those who consume them, especially over long time periods are currently unknown."
Monsanto has immediately responded to the study, stating that the research is "based on faulty analytical methods and reasoning and do not call into question the safety findings for these products."
The IJBS study's author Gilles-Eric Séralini responded to the Monsanto statement on the blog, Food Freedom, "Our study contradicts Monsanto conclusions because Monsanto systematically neglects significant health effects in mammals that are different in males and females eating GMOs, or not proportional to the dose. This is a very serious mistake, dramatic for public health. This is the major conclusion revealed by our work, the only careful reanalysis of Monsanto crude statistical data."

We continue to improve our soil and our grasses by ammending our pastures with organic compost tea, and then by feeding the natural biology (which we call our micro-herd) with two annual sprayings of HYDROLYSISED FISH, for nitrogen - HUMIC ACID, to feed the fungi, and MOLASSES, to feed the bacterii.
This is a very expensive regimen, and we think it is worth the expense because or our dedication to nutrient dense food, and to producing the very best eggs possible. That is why you buy our eggs, and we are conscious of your desire for an ethical egg.
Some producers of "pastured organic eggs" adhere to the letter of the law, but totally ignore the true spirit of organic standards in the name of profit from the "organic" brand. This saddens me, but that is life in the year 2010. Bankers, Wall Street, you know the names of the profiteers. Be careful of labels on eggs, they are very opaque and do not tell the true story of what is inside the carton that you purchase for your family. The USDA Organic Seal can and is, misused and abused.
Ask, where were these eggs produced, has the soil been independently tested, have there been tissue samples of the grassed sampled and tested?

BackYard Chicken Flocks

Then almost as suddenly the recession hit us, and grain prices came back down closer to a normal level. This happened just as we raising our prices. We held off as long as we could - and now - WE ARE ABLE TO MOVE THE PRICE DOWN AGAIN.... This is due to the fact that corn and other grains seem to be staying in a lower price range.
I know this has strained your food budgets, and the up and down of the market has made us all wary and a bit confused about where we are headed next.

Cooking Grass-fed Beef
Tips For Cooking Grass Fed Meats

I’ve been telling people grass is good for years. As The Organic Chef and an organic grass fed beef farmer, it’s only natural that I’ve heard just about everything a person could tell me about grass fed beef.Here I’ve chosen three “myths” about grass fed beef to debunk:
1) All beef is grass-fed
2) Grass-fed beef is tough
3) Beef is beef and grass-fed beef is no different nutritionally
1) This is the same as saying that all cows are milk fed. Is it true? Yes. But we all know that this is only until they are weaned. Most commercial cows eat grass for a few short months until they are old enough to be sold to the feed lots. Any goodness from the grass that they did eat from that little time spent on pasture is completely erased the moment they hit the market. From that point on, they go from the quiet comforts of their mother and herd to the deafening noise of the market and the all too often jolt from the free flowing cattle prod. Over crowded conditions, lack of food and water and, in most cases, not even enough room to lie down, and that is just at the livestock market. Once they reach the feed lot, matters only get worse. This is a place where the duty of the veterinarian is not to care for the well being of the livestock, but to merely keep it alive long enough to get to slaughter. I challenge anyone to find a picture of a feedlot that contains a single blade of grass in ANY of its feed pens. Call me crazy, but this isn’t my idea of grass-fed. A good tip to learn if your beef is really grass fed: The fat in truly grass fed beef runs clear, and there is very little of it!
2) Grass-fed beef can be tough if you don’t prepare it properly. It requires a little skill and if it is done incorrectly, the result is tough beef. Commerical beef producers have found ways to tenderize meats through chemicals, gases, puncturing, feeds and many other little tricks to make you a better cook. When you are cooking grass-fed beef, remember to sear and brown the outside. Browning equals flavor - no brown, no flavor. Not burned, just caramelized. This can be done on a grill or in a pan even under a broiler. From that point, the heat needs to be turned down low. I like to finish my beef in the oven at 275 degrees until I’ve reach the desired internal temperature of 145°. To have it your way, just follow the temperature guideline below:
130°-140°= Rare
140°- 145°= Medium Rare
145°-150°= Medium
150°-155°= Medium well
155°-160°= Well done
A resting period for beef is crucial and especially so for grass-fed beef. Five to ten minutes will suffice. There is no need to let the meat get cold, so cover it as it rests, aluminum foil is just fine.
3) All beef is not created equal. Grass is Good - Really Good. A widely cited 2001 report by The Union of Concerned Scientists (UCS) estimates that the quantities of antimicrobials administered to livestock and poultry for non-therapeutic purposes (growth promotion and disease prevention) far outweigh the amount of antibiotics used on humans. According to UCS estimates, humans use approximately 4.5 million pounds of antibiotics annually. This figure includes all antimicrobials applied in courses of medical treatment (50 million cases or 3 million pounds), as well as in topical creams, soaps, and disinfectants (1.5 million pounds). In comparison, antimicrobial use in the three major sectors of livestock - beef, pork, and poultry - is estimated at 24.6 million pounds annually, eight times the amount used in human medicine. By those numbers, non-therapeutic use of antimicrobials in livestock agriculture accounts for 70% of total antibiotic use. The study in the Feb. 18th issue of the Journal of the American Medical Association reported that all levels of antibiotic use were associated with increased risk of breast cancer and death from breast cancer. What does this all have to do with grass fed meats.
Organic meat would seem safe, considering no hormones or antibiotics are administered to these animals, but is that really enough? With recent E-Coli scares from even organic meat producers popping up, how are we to know? Understanding why and how E-Coli has become so harmful to humans is key. When an animal is grain fed, either organic or commercial, the stomach acids in the cattle strengthen. Michael Pollen, author of The Omnivore’s Dilemma makes it clear: “The recent strain of E. Coli 0157:H7 is believed to have evolved in the gut of feedlot cattle. These are animals that stand around in their manure all day long, eating a diet of grain that happens to turn a cow’s rumen into an ideal habitat for E. coli 0157:H7. (The bug can’t survive long in cattle living on grass.) Industrial animal agriculture produces more than a billion tons of manure every year, manure that, besides being full of nasty microbes like E. coli 0157:H7 (not to mention high concentrations of the pharmaceuticals animals must receive so they can tolerate the feedlot lifestyle), often ends up in places it shouldn’t be, rather than in pastures, where it would not only be harmless, but also actually do some good. To think of animal manure as pollution rather than fertility is a relatively new (and industrial) idea.”
Grain fed animals, it appears, develop newer and stronger bacteria in response to the overly acidic environment produced by massive grain feeding. The human body cannot kill these strains as they naturally would in similar but weaker strains the human body carries naturally on its own. These “Super Bugs” in the cattle manure that comes from feed lot cows is then often used as fertilizer on vegetables. When the meat is processed for human consumption, the super bugs find their way into our diet and our bodies, causing illness and sometimes death.
Grass feeding cattle does not promote an acidic environment within the stomach. Humans can easily combat and kill and E.Coli that is present in the gut of a grass fed animal. The digestive system in grass fed animals runs at 7 pH versus 4 pH in grain fed animals. E. Coli 157 will not survive in the stomach of a grass-fed animal due to the high pH. Furthermore, since cattle raised in feedlots are not fresh from the shower, we should be even more concerned. Feedlot animals are forced to stand all day in confined areas in their own manure and cannot help but be covered in it. Grass raised cattle are not confined and less likely to be covered in their own manure. At the end of the day, pragmatically, the only way to cut down your risk of becoming ill from a virulent strain of E. Coli is to eat grass-fed meats.
In the Grass Farmer’s April 2006 issue, Dr. Tilek Dhiman of Utah State University spoke at the American Grass Fed Association’s seminar and reported:

- 300% More Vitamin E
- 75% More Omega-3
- 78% More Beta-Carotene
In grass fed meats studies:
- 11 out of 11 found CLA decreases cancer
- Four out of five have found a decrease in body fat
- Two out of two have found a decrease in heart disease
- Three out of three found a decrease in adult diabetes
- Six out of six have found increased immunity to disease
- Two out of two found an increase in bone density
Here at Rosas Farms, we’ve been working with physicians and scientists and are working on proving a link between higher estrogen levels in men and what they eat. The bottom line is grass fed beef is good, it’s more difficult to prepare at first, but the health benefits outweigh any amount of work in the kitchen. We held off for as long as we could before raising our prices, but the price of all grains are totally out of control, and organic grains are in even more of a crisis.
All food costs are rising drastically. You can expect a 4-8% rise in most of your food items this year alone, some items may be even higher.
GLOBAL FOOD CRISIS
While this is not good news for our customers; please take the time to inform yourself about the extent of this food crisis. Poor people in most countries pay many time more of their income as a percentage than we do in the U.S. This ranges from 10% to over 20% for those who even earn an income, to totally unaffordable for those in the most impoverished countries.

very unhealthy nation, it is sneaking into every concievable product, and has grown in use over 1,000% in just one lifetime. Please inform

We just put up a new 100 ton bin for corn so that when we find corn at a decent price we can stockpile as much as we can afford. We
are facing huge increases in our production costs, as are all egg producers - and yet we are trying our best to hold down wholesale and

These babies will start to produce our nutrient dense eggs around November 22nd.
We added them because of the growing demand for our eggs. Here let me say "Thank You" to each of you who purchases our eggs at your local Whole Foods Market in Texas and Louisiana.
About every week we get Email and even phone calls from people who contact us to tell us how good our eggs are, how different from the Free Range eggs that they had been buying. Some remember the eggs from grandparents or great-grandparents flocks, and the tell us that they haven't had such good eggs like that until now.
We are proud to be a part of the new wave of farms that produce Organic eggs on our nutrient dense organic pastures - this is step one in the Humane treatment of chickens; allowing them to live outside in the fresh air and sunshine where up to 30% of their diet comes from grasses, clovers, bugs, grasshoppers, grubs, worms and such. Chickens are not vegetarians, and so when you see a carton labeled "Hens fed a Vegetarian Diet" you know right away that those eggs are much higher in cholesterol than those from hens that live out of doors and eat animal protein.

The Difference Between "Pastured" & "Free Range"
I am a farmer, I produce organic eggs. My hens are "Pastured" i.e. they live in moveable coops in my organic pastures. I read your article entitled "Ethical Eggs Ruling the Roost." Eggs marked from "Free Range" hens are one of the most misleading labels in the egg industry, although you got it right by stating that they are free to "roam in a barn", the label, for most customers conjures up visions of hens roaming free in grassy meadows, which of course is untrue. There are currently no regulations or enforcement that the hens actually ever go outside, or that there is very much space to "roam" once they get there, which most of them seldom do. Another problem area is the touting of "vegetarian diet" chickens are not vegetarian. Your article speaks about the "rich yellow yolks" and "higher omega-3" the color is obtained by Barn Raised hens by adding coloring capable ingredients in the feed.
The public needs to be aware of these misleading labels, and need to be made aware of what "Pastured" or "Pasture Raised means. It means that the hens live in pastures and all day long eat as much as 30% of their diets from the pasture, e.g., they eat; grass, bugs, grasshoppers, worms, grubs and so forth. In this way they get their natural source of Omega-3 from the fresh green grasses, and their need for "animal" protein from the insects, worms and such.
Pastured eggs are naturally nutrient dense, the rich golden-yellow yolks are a result of their diet and lifestyle. Lifestyle which includes being able to take dust baths, a natural habit of chickens, one which "Free Range" or "Barn Raised" hens do not have the opportunity to do.
"Free Range" is a definite improvement over cage raised, or battery raised hens; however, Pastured or Pasture Raised hens produce an even healthier, humane and more nutrient dense eggs than any other farming method. These are the eggs like the ones that our forbears raised by cooperating with nature and allowing chickens to truly express their full nature as chickens by living in the out of doors, under the sun where they are much healthier and suffer far less disease than Free Range hens who live in crowded barns and breathe air that will burn the nose of any creature with its high ammonia content.

A hundred years ago, if you wanted your chickens to stay alive and lay eggs for you, you had to provide them with clean water, fresh air, wholesome food, sunshine, and room to walk around. Hens that are provided with these luxuries nowadays are very lucky hens indeed, and because they are typically penned out of doors in pastures of fresh green grass, their eggs are termed "pastured" eggs.
Because pastured hens are allowed to live a healthy, natural chicken life, their eggs are shockingly (and measurably) superior in flavor and nutritional value. Pastured eggs typically contain 10% less fat, 34% less cholesterol, 40% more vitamin A, 220% more vitamin E, and 300-400% higher levels of omega-3 fatty acids. In addition to being better for you, pastured eggs taste much better and give superior results when used in baking and other cookery. Some pastry chefs claim that using pastured eggs causes cakes and soufflés to rise as much as 30% higher and that the higher vitamin E content causes baked goods to stay fresh longer.

For starters, the yolks are a deep, bright orange-gold hue that clearly illustrates their greater beta-carotene content.
